Brussels Sprout Quiche With Pear and Feta

  • 1 pastry dough shortcrust or puff pastry
  • 1 kg brussels sprouts
  • 4 pears in slices
  • 250 g feta
  • 5 eggs
  • 500 mL milk
  • salt
  • pepper


  1. Preheat the oven to 180°C fan. In a bowl, mix the cream with the herbs and crushed garlic.
  2. Peal the potatoes and slice them using a mandolin. Spread the potatoes in a baking dish, pour the cream mixture over them, then sprinkle the grated cheese on top.
  3. Bake in the oven for 40 minutes. Increase the temperature to 210°C and bake for another 10 minutes until the cheese turns gold-brown.
