Instructions

  1. Heat the oil in a medium-sized saucepan. Add the onion and bell pepper and sauté for 3 minutes.
  2. Add the canned tomatoes, water, and vegetable broth to the pot. Bring to a boil, then cover with a lid and simmer for 10-15 minutes.
  3. Stir the mascarpone into the soup. Blend with a hand blender to a creamy consistency. Season with salt and pepper to taste.
  4. Divide the soup into bowls and garnish with the diced tomatoes, basil and parmesan flakes. Enjoy!
